Introduction:Wild Blueberries have many health benefits like helping short term memory loss, improving motor skills and protecting against cancer or heart disease. This recipe is for healthy low fat wild blueberry muffins.
Turn a conventional oven on to 400 degrees and gather the following ingredients for low fat blueberry muffins:
4 1/2 cups all-purpose flour
3 tablespoons baking powder
1/2 teaspoon salt
3/4 cup brown sugar
3/4 cup granulated sugar
1/4 cups low fat buttermilk
1/2 cups (12 oz) egg substitute
1/2 cup canola oil
6 cups Wild Blueberries
3 tablespoons granulated sugar
1 1/2 teaspoons ground cinnamon
In a large bowl, combine the flour, salt and baking powder. In another bowl, add the 3/4 cup of brown and white sugars, buttermilk, egg substitute and oil. Whisk it together and then add it to the flour, salt and baking powder mixture. Blend everything together.
The next step in preparing the low fat Wild Blueberry muffins is to fold in the Wild Blueberries. Make sure that everything is mixed well. In a separate small bowl or cup, mix the 3 tablespoons of granulated sugar and the 1 1/2 teaspoons of ground cinnamon.
Line muffin tins or grease them. Put 1/4 cup low fat blueberry muffin batter into each tin holder. Sprinkle the top of the batter with the sugar and cinnamon mixture.
Put the prepared low fat blueberry muffins in the oven. Bake them in a 400 degree oven (or 375 degree convection oven) for 18 to 22 minutes or until they are firm to touch. They are best served warm, but are delicious cold, too.
The recipe should make about 36 muffins.
