Here is one very great way to add color to your gravy. Try adding a bit of instant coffee powder crystals. It won't affect the flavor of the gravy at all.
We have all had lumpy gravy from one time or another. Lumpy gravy? Buzz in your blender or food processor, beat vigorously with a wire whisk, or push the gravy through a fine sieve.
To obtain a rich brown color when preparing beef stock, brown the bones under a broiler. Then add the bones to the stock and simmer.

When a recipe calls for reducing a liquid, here is a foolproof way to measure the amount reduced. Put the handle of a wooden spoon upright in the liquid. Take it out and mark the level of the liquid with a pencil. Check the depth of the liquid periodically with the marked spoon handle.
