Preheat oven to 350 and follow the instructions below for an awesome cheese cake!
Preheat your oven to 350 and place the oven rack on the middle level. Lightly butter either a 9 or 10 inch spring form pan.
2 cups finely crushed graham crackers -
5 tbsp. unsalted butter, melted (or more) -
Combine graham cracker crumbs and butter.- Press firmly onto the bottom of lightly buttered spring form pan, and about 1/2 way up the sides of the pan...or higher.
4 ea. 8oz. pkg. cream cheese at room temp. -
4 eggs -
1 & 1/4 cups sugar -
1 tbsp lemon juice -
2 tsp. vanilla-
Beat cream cheese in large bowl with mixer until smooth. Add eggs, sugar, lemon juice and vanilla. Poor into crust -
BAKE: 10 inch pan for 40-45 min, or 9 inch pan for 50-55 min. Remove from oven and let stand at room temp. for 15 minutes. Retain oven at 350 degrees
2 cups sour cream
1/4 cup sugar
1 tsp. vanilla
Combine sour cream, sugar and vanilla and blend well. Cover and refrigerate while cake is baking. When cake is finished baking, spoon topping over the top. Return to oven and bake for 5 minutes longer.
Transfer the cheese cake from the oven and let it cool down at room temperature for about 30 minutes. Keeping the cheese cake in the pan, refrigerate for at least 24 hrs.
Spoon canned cherry pie filling on the top, make your own special topping, or serve without a topping at all.
