Gather the ingredients you need. For this delicious recipe you will need:
1 1/2 Cucumbers
1/2 Cup of Avocado
1 Garlic Clove
2 Teaspoons of Olive Oil (Cold Pressed)
2 Teaspoons of Onion
1 Tablespoon of Fresh Parsley
Salt
Pepper
Peel, cut and blend one cucumber for 30 seconds using a blending or until it is soft and almost liquid. Be sure to leave the other half of the cucumber for later. Do the same to the avocado. Once it is peeled and pitted add it to the blender.
Add some more ingredients to the blender. You can now add the olive oil, garlic, parsley and water. Mix this for a few seconds using the blender.
Once the previous ingredients are mixed, you will want to add the remaining ingredients. You can add the onions and a dash of salt and pepper to the cold soup. This will season the soup.
