The Chuck Roast is one of the least expensive roasts you'll find in the store, but don't let that fool you when it comes to taste. It is also one of the best tasting roasts as well. Whether you bake it or put it in the crock pot, it doesn't matter as long as you prepare it right. This article focuses on cooking a Chuck in the oven like my mother used to do.
Though you will not want a roast with a lot of fat, when choosing a Chuck Roast, it will be important to get one that has "some" marbelizing in the middle as this ensures that your roast will be tender. Choose one without fat around the outside and with the smallest amount of marbelizing. (Meaning the white streaks seen in the middle of the roast!)
Take your roast out of its packaging and rinse it off with cold water. Pepper each side (if you like) and sear both sides in a skillett. Place your seared roas in your roasting pan and add 1 cup of water. Next open a package of dry onion soup mix and sprinkle it on top and around the edges of the roast. (No need to add salt as the dehydrated onion soup will be salty enough.)
Make room for your roasting pan to fit on a wrack that you will place in the middle of your oven. Then preheat to 325 degrees.
Choose which vegetables you want to cook along with your roast. Wash them off under cool water and cut them into large bite size pieces.
Place a top on your roasting pan and place the pan on the middle wrack. You will want to cook your roast at 325 degrees approximately 1 hour per pound.
The dehydrated onion soup mixture serves as a meat tenderizer as well as adding an excellent taste. Enjoy!

I make a killer pot roast that melts in your mouth. My steps are similar to yours, but I sear the meat on all sides before putting it in the roasting pan. I like a little water and wine in the bottom of the pan and make the gravy from that later.
