Whether it is football season snack time, lunch time or an addition to your main meal, this healthy carrot salad will be a hit with everyone. The preparation time spent is well worth the end result.
Soaking the raisins overnight in water will make them plump, soft and taste much better. It is not necessary so you don't have to soak them. Choose dark or golden raisins measuring any amount you want to add for your ingredients in your carrot salad. The dark raisins give a nice contrast, so I use them most often. Some people like a lot of raisins, so 1/2 cup of raisins for 4 carrots is not out of line.
Select fresh raw carrots for your carrot salad recipe. Peel the number of carrots you want to use for your salad. A good rule of thumb is one carrot per person. When they are completely peeled so all the outer layer is gone continue peeling for your carrot salad. The shavings make a really pretty looking salad while it is easily mixed with the other ingredients.
Fresh lemon juice is the best, however if you have Sunkist real lemon, lemon juice that can be used. Use the lemon juice sparingly. 8 to 10 drops per carrot is about right. Measure the amount and set aside in a small glass mixing bowl. If you are preparing this ingredient ahead of time, cover and refrigerate until ready to use.
Real Mayonnaise or homemade mayonnaise is best, however if you only prefer miracle whip, that will work alright too. Determine how moist you like your salads to gauge the amount of mayonnaise. I prefer 1/8 cup for each carrot. Try that in your recipe with one carrot and see if that is the right amount for you.
Use pre packaged walnuts. I like Diamond Brand. Measure 2 tablespoons per carrot. Finely chop walnuts in food processor or nut chopping kitchen device. Combine all the ingredients and mix until you have them blended well. Serve in a clear or white fluted salad dish since the carrot salad is a colorful offering.
Refrigerate leftover carrot salad in a tightly covered container.
