This soup is very filling but small amounts make for a good appetizer. It stores well in the refrigerator or in the freezer. It is relatively simple and can be made with only 6 ingredients. Putting the ingredients together takes 20 minutes and then let it cook for a few hours. My favorite spice to add is thyme.
A pureed delicacy, very warm and comfy it goes well with fall and winter. The apple adds sweetness while the potato adds structure and content. It also has yellow split peas, cumin, coriander, and ginger!
