Oh yummmmy! On of my favorites and best made with fresh coconut but can be made with canned coconut. This pie is also topped with an merangue made of egg whites and beaten til light and fluffy.
A summer time special treat this pie is tangy and sweet all at the same time. Fresh squeezed lemons give this pie it's great taste.
Here's one with no merangue but still has that sweet yet tart taste. Usually made with canned cherry pie filling with a flakey top and bottom crust. Best served with a big scoop of vanilla ice cream.
