There is no question about it. Country folk know how to eat potatoes. Maybe its because potatoes are cheap and filling. Maybe its because they know a good thing when they see it. Either way, check out this hardy country meals with potatoes.
The favorite, of course, is mashed potatoes -- but country folk aren't limited to eating them with a meal. Mashed potatoes top ground beef and corn for a delicious shepherd's pie or serve as the main course all by themselves.
I'm not talking about french fries, here. Fried potatoes are sliced thin and fried up in butter in cast iron pan. Once they brown on one side, flip them over until both sides are golden brown. Season with salt and pepper.
Traditional baked potatoes are always a treat, but us country folks don't top our with sour cream and chives. We hollow out the skin and mash the innards with butter and season with salt and pepper. But the best part is the crispy skin filled with a dab of melted butter.
Potatoes and onions are baked in the oven with a little water or milk. Slice the potatoes and onions and layer then in a casserole dish and pop them in the oven until they a soft and tender.
Home fries is a word those city slickers use -- country folk call it hash. Cut cooked potatoes into cubes and fry them up in a little butter in a cast iron pan until they are brown on all sides. The best, of course is made from baby potatoes and is referred to as "new potato hash."
