Making baked potato skins at home is simple and easy.
5 or 6 medium size baking potatoes
1 & 1/2 Tablespoons melted butter
salt
Bacon (approx 5 slices)cooked and diced
Shredded cheddar cheese (about 3/4 cup)
Bake the 5 potatoes and set aside to cool long enough to be able to handle. Cut them in half lengthwise and scoop out most of the inside potato.
Take your potato half and brush with the melted butter. Sprinkle with salt to taste. Place on cookie sheet and bake for 10 to 15 minutes so that potatoes are just crispy but not too hard.
Take your potato skins and sprinkle each with the shredded cheddar cheese and the cooked and diced bacon. Simply place back in the oven and leave until the cheese is melted.
Your potato skins are ready to serve. Temptingly delicious with a dollop of sour cream on each. For another alternative to sour cream ranch dressing makes a good choice.
