Afternoon tea was invented in England by a hungry duchess who would serve dainty bite-sized foods to her friends and guests to quench afternoon hunger pains. Over the centuries, these five foods have become mainstays at afternoon tea parties.
Scones are required at afternoon tea parties. In addition to the basic buttery biscuit-like traditional scones, there are a variety of other flavors including herbal or meaty savories, and floral and fruity sweet scones with exotic ingredients.
Scones have to be eaten properly and this requires spreading clotted cream, lemon curd and/or strawberry preserves over each scone half before taking a bite. Clotted cream is a thick and heavy cream with the texture of butter. Lemon curd is a tart and lemony flavored custard-like filling. Strawberry preserve is jam with pieces of cooked strawberries.
Afternoon tea sandwiches are bite-sized slivers of bread filled with highly seasoned non-sweet ingredients. The traditional tea sandwich assortment for afternoon tea includes cucumber slices, watercress, chicken salad, sliced hard-boiled egg, smoked salmon or seafood salad.
Afternoon tea pastries can be simple or elaborate. A basic tea or pound cake can be served as well as tiny petit fours, tarts and an assortment of tea-flavored gourmet cookies.
Many hostesses serve chocolates filled with liqueur as a signature finish to their afternoon tea parties. However, non-alcoholic chocolate truffles, caramels and other chocolate candy favorites are sure to please guests.
