The following top five omelet variations are based on a three-egg omelet, with 1 tablespoon butter and sea salt and pepper to taste, beaten with a wire whisk.
Chives omelet is very delicious. All you do is add 1 tablespoon of fine-cut chives, cut with a kitchen shears, to the beaten three-egg omelet mixture. Cook in a frying pan and serve.
Paul's omelet is very delicious also. Cut a sausage into five or six pieces. Brown over low heat in the omelet pan. Pour off the fat. Add butter and 1 tablespoon minced parsley or 1/4 teaspoon minced marjoram. Pour in the three-egg omelet mixture. Cook. Top with 2 tablespoons tomato sauce.
Peel a raw potato and slice as thin as possible. Melt 2 tablespoons butter and add 1 teaspoon salad oil. Add the potato. Cook over medium heat, turning a few times, until the potato slices are cooked and slightly browned, about 10 to 15 minutes. Add a thick slice of onion broken into rings. Cook for a few minutes with the potato. Beat the three eggs with 1 tablespoon grated cheese. Pour over the potato, cook and serve.
Thinly slice two or three medium-size fresh mushrooms. Add a green onion or one inch of white leek, minced. Pepper generously. Melt 1 tablespoon butter until light brown. Add the mushroom mixture. Stir constantly over high heat for 30 seconds. Pour the three-egg omelet mixture on top. Cook and serve.
Dried herbs can be used, but always try to use fresh parsley, chives or dill with the dried herbs.
Use 2 tablespoons minced parsley, 1 teaspoon minced chives, and a pinch of basil or 1 teaspoon minced fresh chervil. Or if you have leeks, mince about 1/2 inch of the white and add to the herbs; in this case chives can be omitted.
Melt the butter, remove the pan from the heat, add the herbs, and stir once. (Herbs are added to the butter first to bring out their full flavor.) Add the three-egg omelet mixture. Put the pan containing the mixture back on the heat. Cook and serve.
For a nice addition, sprinkle 2 to 3 tablespoons of grated Swiss cheese over the finished omelet, and enjoy.
