This is an easy Ice Cream Cake to make. It only requires a few ingredients and your freezer. It's sure to be a hit with young and old alike.
Graham Crackers crushed to yield 1 & 1/2 cups
Jell-O Instant Cheesecake Pudding
Strawberry Ice Cream (approx 1/2 gal size slightly thawed)
Cool Whip (thawed)
Rectangle freezer type container
Prepare the crust: take crushed graham crackers, 1/4 cup sugar and add 1/3 cup melted butter. Mix well and spread in bottom of your freezer type container.
Prepare the Jell-O instant cheesecake pudding according to package directions.
Slightly thaw your strawberry ice cream and gently mix into the cheesecake pudding until blended.
Spread on top of your cracker crust making sure it's even and smooth.
Once you have your ice cream mixture spread over the cracker crust take the container of cool whip and spread evenly over the top. Make sure the cool whip is not frozen so it spreads easily.
This strawberry cheesecake ice cream cake will need to be frozen for at least 6 hours. It is better if you leave it overnight for optimum results.
Take your frozen cake and simply slice and serve!
You can also add some fresh strawberries on top for added garnish is you wish.
