Sausages are so versatile - you can add Italian sausage in spaghetti sauce to replace ground beef or added with ground beef, or you can put it in a tomato based soup with pasta noodles.
Italian sausage comes in mild or hot; there can also be varieties of sausages at your local grocery store, such as bratwurst, breakfast sausage, honey garlic, Merguez sausage, which are smaller; maple; there can also be bison or venison sausage available; Andouille sausage;
Sausage mushroom quiche:
1/2 lb pork sausage
3/4 lb sliced fresh mushrooms
1/4 cup butter
2 frozen pie crusts, thawed
1 cup heavy cream
2 eggs, beaten
1 tbs flour
1 tbs melted butter
1 tbs lemon juice
1/2 cup grated Parmesan cheese
salt and pepper, to taste
Bake pie crusts at 400 degrees for 10 minutes, until golden. Remove pie crusts and set aside.
Cook sausage on medium high heat in a sauce pan, until crumbly and no longer pink inside.
Remove sausage and place in towel-lined plate, discard any excess grease in pan; Cook mushrooms and butter in skillet, until browned, approx. 5 minutes. Put mixture of sausage and mushrooms in both pie crusts. Mix eggs, butter, flour, cream, lemon juice and salt and pepper in mixing bowl.
Pour into pie crust mixture until sausage/mushrooms are coated with egg mixture. Top with grated Parmesan cheese. Bake for 35 minutes, until light and puffy. Let stand for 10 minutes before serving.
Spaghetti sauce with sausages:
1 lb Italian sausage links, sliced
2 tbsp Olive oil
1/3 cup chopped onion
1/4 cup chopped green Bell pepper
6 to 8 ozs sliced fresh mushrooms
2 cans diced tomatoes
3 cans (24 oz total) tomato sauce
2 cans (6 oz each) tomato paste
1 1/2 tsp dried basil
1 1/2 tsp dried oregano
1 tsp garlic powder
salt and pepper to taste
grated or dried Parmesan cheese
Cook sausage links, sliced in sauce pan, until no longer pink inside, on medium-high heat. Drain excess grease. Add Olive oil, and cook onion, peppers and mushrooms, 5 minutes. Add tomatoes and sauce. Add spices. You can cook sauce from anywhere of 1 hour to 3 hours. Sprinkle your spaghetti with Parmesan cheese.
