In our fat-free society, certain things have been wrongfully vilified. Some fats are better than others and some - like trans fats - are deadly, but our bodies need fat to function properly.
One of the best fats that we can use comes from coconuts. When selecting a coconut oil, care needs to be taken to get a pure, unrefined, expeller-pressed oil. At temperatures colder than 70 degrees F, it will be solid. Also, get it in a glass jar, preferably. Cans and plastic can leech unwanted elements into the oil.
Coconut oil can be used for cooking in place of butter or vegetable oils. It is more stable at high temperatures so it doesn't easily go rancid. Because it turns solid at colder temperatures, it isn't well suited to salad dressing and the like.
Coconut oil adds a nice, subtle flavor to baked goods. Using it in place of vegetable oils (that are often rancid and potentially sourced from genetically modified crops) is great!
Using coconut oil in place of moisturizer is amazing! People with eczema and psoriasis have reported benefits from using coconut oil topically. Skin is the biggest organ in the body and what you put on it directly affects your health. One rule of thumb is that if you wouldn't eat it, don't put it on your skin.
Use coconut oil on your lips to prevent/heal chapped lips. It isn't greasy like Vaseline or other petroleum-based products. More importantly, it isn't petroleum-based!
Use coconut directly as a nutritional supplement. Coconut oil is mostly composed of medium chain triglycerides. Not all triglycerides are created equal! MCTs are a great source of energy for our bodies and they are known to aid in weight loss and appetite control.
As with anything, don't over do it. Moderation is the key.

Coconut oil is composed mainly of medium chain amino acides, one of the only oils like that. It's more digestible and doesn't cause the problems that the other saturated fats cause. Good list! H5!
