Banana pudding is my hubby's favorite dessert. I recently made it for his 40th birthday bash, and very quickly realized, I didn't make enough! Here is the recipe.
Using a large box of instant vanilla pudding, prepare it according to the package directions. Next, mix in a small container of sour cream and a small tub of cool whip.
I use a flatt bottom container, such as the ones that gallon ice cream comes in. Place a layer of Nilla Wafers across the entire bottom of the container.
On top of the Nilla Wafers, place a layer of sliced bananas. I use 1 and 1/2 bananas per layer to be sure and get good coverage.
Pour about a fourth of the bowl of pudding mixture over the Nilla Wafers and sliced bananas. You want to save enough to do several more layers.
Continue the layers until you have used up all of the pudding mixture. Leave the sliced bananas off the top, otherwise they will turn brown. Place a few Nilla Wafers on the top for decoration, then chill in the fridge.
This pudding is best an hour or so later, but don't let it sit overnight or the cookies will turn soft. I don't ever have that problem. It disappears pretty quickly! Hope you enjoy.
