There are many different jams, jellies, pickled vegetables that you can can and preserve.
You can also make relish, and salsas.
Some examples of jams are:
- rhubarb
- rhubarb/strawberry
- strawberry
- cherry
Recipe Caramel-Apple Jam
- 6 cups apples, diced and peeled
- 1/2 cup water
- 1/2 tsp butter
- 1 pkg. powdered fruit pectin
- 3 cups sugar
- 2 cups brown sugar, packed
- 1/2 ground cinnamon
- 1/4 tsp ground nutmeg
In a large pot, combine apples, butter and water. Cook over low heat until apples are soft.
Caramel-Apple Jam (cont'd.)
Stir in pectin and bring to a rolling boil, stir constantly. Add the sugars, and spices, and bring to a rolling boil again, boiling for 1 min. Stir the mixture constantly.
Remove from heat and skim off any foam. Pour hot jam into sterilized jars, leaving 1/4 inch space for cover.
Process for 10 min in a boiling water bath. Makes 7 half-pints.
Homemade tomato relish recipe
- 1 kg. tomatoes
- 1 kg. onions
- 1 1/2 cups white sugar
- 2 cups apple cider vinegar
- 2 tbsp. salt
- 2 tbsp. mustard
- 1 1/2 tbsp. curry powder
- 2 tbsp. cornflour to thicken, mixed with a bit of water

Chop tomatoes and onions
Put in a stockpot along with vinegar, and bring to a boil. Let simmer, and gradually add sugar, stirring so it doesn't stick to bottom of pot.
Add rest of ingredients, ensuring sugar doesn't stick. Transfer to hot sterilized jars.
