I'm the first to admit that I'm not really "into" veggies...I like some of them, but most of the time, I'd rather eat fruit or meat. However, there are some vegetables that, especially when prepared in an awesome fashion, I will gladly devour.
Whoever first decided to cook up a prickly thistle and try to scrape meat off thorny leaves, I thank you. Artichokes look like they really don't want to be eaten, but they are well worth the effort of making them.
Tip: Smaller artichokes are usually more tender, and will cook up easily in a steamer basket in about 30-40 minutes. Dip the leaves in mayonnaise, and when you get to the heart, scrape off the pointy thistle bits and eat the fleshy circle attached to the stem-it's the best part!
Broccoli was my favorite vegetable growing up (yes, I was a kid who LOVED broccoli!) The best thing about broccoli is that the florets are great at soaking up sauces. I especially love them in Asian dishes such as stir fry.
Kale is my absolute favorite leafy green. There's a surprising amount of flavor in those unassuming curly leaves. For a fun way to prepare them, roughly chop the leaves and roast them in the oven with olive oil and salt for about 10 minutes-they come out like chips!
Not only does asparagus taste good, but it's super easy to prepare, and you can eat it with your hands! I simply roast the spears in the oven with some minced garlic, olive oil, sea salt, and pepper.
Peas get a of grief. Many people have only been exposed to the grey, mushy peas that come in a tin can. I hated peas until my dad started growing them in the backyard. Suddenly I realised how amazingly sweet, crisp, tender, and delicious fresh peas are!
Hmm, maybe I'm more passionate about vegetables than I thought. I still won't eat carrots or celery, though!

I'm not a fan of green vegs either and can only concur with one on your list. French green beans top my list!
Green is alkaline, so I'm all about it. :)
