Summertime is a great time to eat healthier and to enjoy the simple foods. I don't like the heat and heat hot foods on a hot day makes me feel overstuffed and miserable no matter how little I eat so, I tend to eat a lot of cold foods during this time of year. But cold doesn't have to mean lacking in nutrition.
I rarely eat tossed salad more than once or twice a week in the winter time but, come summer this is one of my stables. I like starting out with a basic head of lettuce, adding assorted spring greens, purple cabbage, carrots, cucumbers, tomatoes, and for topping I just sprinkle a bit of parmesan cheese over the top instead of dressing. Makes a great meal and is healthy for you too.
What out door cookout would be complete without some good old American potato salad. I make mine with baked potatoes instead of boiled and love to add a dash of garlic to the dressing.
One of my few hot summer dishes is vegetables done over a charcoal grill. I love combining onions, peppers, thin slices of squash,carrots, egg plant and a few other veggies and marinating them in a garlic and ginger paste and then grilling them to perfection. You can have your steaks, hotdogs, and hamburgers I'll take grilled veggies any day of the week!
I love shrimp done on the grill and I don't really care if that shrimp is grilled by itself or made into a cute tasty shrimp kabob.
While Ice tea is my favorite year round drink there is nothing I like more than a nice refreshing glass of lime aid on those really hot days. The tangyness just seems to cool you a little more than more bland drinks can.
I mostly eat light during the summer months and if I get hungry between meals that oranges, apples, and other fruit hold me over without making me feel over stuffed and miserable in the heat.
