RPG video games give you the illusion that you are making some sort of "progress". Granted, when all is said and done, you will put down the game and move on. However, in the mean time it's fun to think you're actually accomplishing goals. Other genres don't offer you the same opportunity.

Instead of giving you a cookie cutter character whose decisions are determined for you, you're instead allowed to create a character from start to finish. They allow you to pick his/her skills, develop his/her abilities and tendencies and more...
Many of these provide you with the opportunity to develop your character. Examples include choosing your party companions (the wily rogue or the staid cleric?) and romancing an NPC.
RPG video games put you at the center of the story, and that story is typically in a rich and interactive environment that will keep you guessing. Much like a thriller novel, they keep you turning the pages until the very end.
Ultimately, the real reason that RPG video games are so much fun is that they give you an escape from the ordinary. No longer are you Bob from accounting, you're Stromgard the Barbarian from the snowcapped mountains! (Or Sir Callahan the Brave, defender of the realm!)
